Yes, I am highly suggesting we eat chocolate pudding. No, I am not talking about some kind of low-fat tasteless carton brand filled with health-destroying ingredients. Instead am talking about the smooth, creamy, sweet and satisfying kind. What if we could have a chocolate pudding that was even more luscious, even more, rich-tasting and chocolaty than our fondest memories? You can be a health nut and even a vegan and enjoy this crazy amazing chocolate pudding. I have never had a chocolate pudding better than this.
The last few years there has been a big push to find healthy alternatives to every comfort food you can imagine. Twenty years ago “health food” tasted like cardboard and was not appealing enough to entice the general public.
Then came along scientific proof that our diet matters and people came out of the woodwork to come up with tasty recipes. It has taken a while but we now have more tasty options than we can possibly keep up with.
Believe it or not, avocados make this pudding base and what makes it so crazy creamy that you will be transported back to one of the all-time greatest comfort foods. The fat in the avocado and coconut milk provide building blocks for health. Healthy Fats can actually help us to lose weight, not gain weight.
Crazy Amazing Chocolate Pudding Recipe
4 ripe organic avocados, halved, pitted and spoon out the meat from the peel
1 can (14 ounces) organic coconut milk organic coconut milk (most grocery stores carry it)
3 to 5 tablespoons unsweetened raw cacao powder
1 to 2 teaspoons organic vanilla extract
1/4 teaspoon Himalayan salt (helpful for taste and provides minerals)
1/4 cup organic raw honey, pure maple syrup, 1 tsp stevia or 2 ripe bananas
Place all ingredients (except cocoa/cacao powder) in blender or food processor and blend. Then slowly add the cocoa/cacao powder.
Taste test. You can always add more sweetener if you need to.
Scoop into individual glass bowls, cover, and refrigerate for 1-2 hours before serving. Give it a stir in the bowl before eating.
Chocolate Options
This is where the magic happens. All the green disappears as you add chocolate. You can add organic cacao nibs, organic chocolate chips, organic carob powder, or any kind of chocolate that you desire. My “chocolate” choices never contain sugar to make this recipe. Additions – Be Creative with Your Tastes
- Fresh or dried fruit
- Fresh or dried coconut
- Nuts or seeds
- Sprinkle with cacao powder
- Powdered cayenne pepper
- Powdered cinnamon or pumpkin pie spice
- Fresh mint or Essential Oil Mint
Alter the recipe to your taste. The options are immense. The higher quality the ingredients, the more you can indulge.
The taste is out of this world. Enjoy every bite — it is healthy!!!
